The Selfie Rose' was fashioned from an interesting Italian grape varietal Aglianico which hails from Southern Italy. It is a late ripening red grape variety and is known to produce deep coloured and savoury table wines. The expressive red berry fruits and the racy natural acidity attracted me to the varietal for Rose' production. The grapes were crushed and held cold on skins for twenty four hours prior to basket pressing and juice settling. The juice was fermented at between 12 to 13'c with two aromatic yeast strains for twenty days. Partial solids were left in the juice during fermentation to enhance the texture of the palate and the wine was fermented to sugar dryness.
The Selfie Rose' has an attractive crimson colour, and the nose is very expressive with red berries of raspberry, strawberry and hints of cranberry.The palate is generous in sweet red fruits and pleasingly textural with fine phenolics and fresh natural acidity which extends the lush yet sugar dry palate. This wine pairs beautifully with Seafood, Asian cuisine and white meats.
